This blade, recently designed by the company Hazaki Knifes in Montreal, is manufactured semi-artisanally in Japan (small company). The handle, for its part, is made by a cabinetmaker from Montreal. The blade is particularly thin.
The core of the knife is made of VG-10, stainless, which is one of the most renowned steels for its sharpness and ease of sharpening.
The handle, securely fixed using rivets and epoxy are lightly treated and the handle will need to be oiled regularly to avoid deterioration.
