Santoku 6.5” - VG10 - Black maple burl - Hazaki
This blade, recently designed by Hazaki Knifes in Montreal, is semi-handcrafted in Japan (small business). The handle is made by a Montreal cabinetmaker. The blade is particularly thin, with a pronounced edge (or secondary angle), making it easier to maintain over time, particularly in terms of thinning. The envelope is composed of 66 layers of low-carbon steel, which facilitates thinning over time. When the Aiguisoir sells a knife, it should come back for maintenance every year for decades to come! That's why L'Aiguisoir is so concerned with the functional aspect of the knives it sells! :-)
The core of the knife is made of VG-10 stainless steel, one of the most renowned for its edge retention and ease of sharpening.
The handle, securely fastened with epoxy glue, is treated with Livos natural oil. Although this oil is very durable, you will still need to oil the handle when it shows signs of absorbing water.
The finish around the blade is impeccable and smooth.
