OBJECTIVE: To impart the basic knowledge and techniques required to sharpen knives efficiently and economically on whetstones. This class is designed for professional cooks and anyone interested in sharpening a variety of knives (Japanese, Western, hunting and fishing, etc.).
HOW IT WORKS :
First part of the session (1h30):
With the help of a multimedia presentation and a detailed demonstration, participants will first be introduced to the basic theoretical knowledge essential to mastering hand knife sharpening on whetstones.
Second part of the session (1h30):
Participants will then be invited to put into practice the elements transmitted in the first part by sharpening various knives (your own knives or practice knives provided). The instructor will guide participants through this practical part according to the type of knives and particular needs.
Four fully-equipped sharpening stations are at your disposal. You'll also find everything you need for sharpening (stones and accessories) and cutting (knives and accessories) on sale on site.
This class will connect you to a thousand years of knowledge, as well as your manual skills!

3 whetstones, 220, 1000 and 6000 grit
