Western kitchen knives

Western knives, as opposed to Japanese knives, have a very specific thicker blade. They are generally made fromsofter stainless steel than Japanese knives, making them more resistant to twisting, but less sharp. Western knives represent a choice wise choice for with a Japanese knife to perform tasks requiring strength, such as cutting a squash for example.
