Santoku 7" - AUS10 - Beech - Hazaki
This blade, recently designed by Hazaki Knifes in Montreal, is semi-handcrafted in Japan (small business). The handle, meanwhile, is made by a Montreal cabinetmaker. The blade is particularly thin.
The core of the knife is made of AUS10 stainless steel, renowned for its edge retention, ease of sharpening and resistance to twisting.
The handle, securely fastened with rivets and epoxy, is treated, but will need to be oiled after some time to avoid deterioration.
Note: This model was made from VG10 steel until autumn 2024, which explains the lower cost. AUS10 steel is slightly softer than VG10. The result is greater resistance to torsion, but a slightly shorter sharpeness life than VG10.
