Santoku 7" - AUS10 - Blackwood - Hazaki
This blade, recently designed by the company Hazaki Knifes in Montreal, is manufactured semi-artisanally in Japan (small company). The handle, for its part, is made by a cabinetmaker from Montreal. The blade is particularly thin.
The core of the knife is made of VG-10, stainless, which is one of the most renowned steels for its sharpness and ease of sharpening.
The handle, securely fixed using rivets and epoxy are lightly treated and the handle will need to be oiled regularly to avoid deterioration. Blackwood, however, is renowned for its excessively high natural varnish, so it's very waterproof.
Note: This model was made from VG10 steel until autumn 2024, which explains the lower cost. AUS10 steel is slightly softer than VG10. The result is greater resistance to torsion, but a slightly shorter cutting life than VG10.
