Santoku 7" - VG10 - blade seulement - Hazaki
This blade, recently designed by the company Hazaki Knifes in Montreal, is manufactured semi-artisanally in Japan (small company). The latter is particularly fine and the grinding (or secondary angle) is very pronounced, which makes maintenance over time easier, particularly in terms of thinning. The envelope being composed of 32 layers of low carbon steel will facilitate thinning over time. When the Sharpener sells a blade, it should come back annually for maintenance for decades! This is why L’Aiguisoir is so concerned with this functional aspect of the knives sold! :-)
The core of the knife is made of VG-10, stainless, which is one of the most renowned steels for its sharpness and ease of sharpening.
With this blade, have fun creating your own knife by making it a unique handle! Notches in the tang provide a secure grip for the blade in the handle.
The finish around the edges of the blade is impeccable and soft.
