Miyabi craftsmanship
- SG2 steel core, one of the best steels on the market from the powder metallurgy. These steels are very hard and resistant and keep the edge for a very long time.
- The grinding (secondary angle) is particularly pronounced, which facilitates the slimming of the blade over the years. It is therefore easy to keep the same optimal geometry of the knife without affecting the appearance of the knife too much.
- The laminated wooden handle is particularly durable
- The shape of the handle is pleasant in hand. On the other hand, if you fully keep your knives by the handle (and not by overlapping the blade), the grip may be less comfortable with smaller hands.

- The slightly more difficult sharpening of these blades requires the use of professional stones
