Miyabi Artisan series
- SG2 core steel, one of the best powder-metallurgy steels on the market. These steels are very hard and resistant, and keep their cutting edge for a very long time.
- The edge bevel (secondary edge) is particularly pronounced, making it easy to thin the blade over the years. So it's easy to maintain the same optimal knife geometry without affecting the knife's appearance too much.
- The laminated wood (pakkawood) handle is particularly durable
- The shape of the handle is pleasant in the hand. However, if you hold your knives entirely by the handle (and not overlapping the blade), the grip may be less comfortable with smaller hands.
- Knife weight: medium
- The slightly more difficult sharpening of these blades requires the use of professional stones.
